Ingredients

  • Green or brown lentils - 200 grams
  • Linguiça (Brazilian sausage) - 150 grams, sliced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bay leaves - 2 leaves
  • Vegetable or chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic and diced carrot, cooking for another 3-4 minutes.
  5. Add the sliced linguiça to the pot and cook until browned, about 5-7 minutes.
  6. Add the rinsed lentils, bay leaves, and broth to the pot. Bring to a boil.
  7. Reduce the heat to low, cover, and simmer for about 25-30 minutes, or until the lentils are tender.
  8. Season with salt and black pepper to taste. Remove bay leaves before serving.
  9. Serve hot, garnished with fresh parsley.
