- Green or brown lentils - 200 grams
- Linguiça (Brazilian sausage) - 150 grams, sliced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bay leaves - 2 leaves
- Vegetable or chicken broth - 500 ml
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced carrot, cooking for another 3-4 minutes.
- Add the sliced linguiça to the pot and cook until browned, about 5-7 minutes.
- Add the rinsed lentils, bay leaves, and broth to the pot. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 25-30 minutes, or until the lentils are tender.
- Season with salt and black pepper to taste. Remove bay leaves before serving.
- Serve hot, garnished with fresh parsley.
