- Brown lentils - 150 grams
- White rice - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 small, diced
- Olive oil - 2 tablespoons
- Vegetable broth - 400 milliliters
- Bay leaf - 1
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, diced carrot, and bell pepper to the pot. Cook for about 5 minutes until the vegetables are softened.
- Stir in the cumin and paprika, cooking for another minute to release the flavors.
- Add the rinsed lentils, vegetable broth, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for about 25 minutes or until the lentils are tender.
- While the lentils are cooking, rinse the rice under cold water. In a separate pot, combine the rice with 200 milliliters of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and cook for 15 minutes or until the rice is fluffy and water is absorbed.
- Once the lentils are cooked, remove the bay leaf and adjust seasoning if necessary.
- Serve the lentils over a bed of rice and garnish with fresh parsley.
