Ingredients

  • Brown lentils - 150 grams
  • White rice - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 small, diced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 milliliters
  • Bay leaf - 1
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic, diced carrot, and bell pepper to the pot. Cook for about 5 minutes until the vegetables are softened.
  4. Stir in the cumin and paprika, cooking for another minute to release the flavors.
  5. Add the rinsed lentils, vegetable broth, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for about 25 minutes or until the lentils are tender.
  6. While the lentils are cooking, rinse the rice under cold water. In a separate pot, combine the rice with 200 milliliters of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and cook for 15 minutes or until the rice is fluffy and water is absorbed.
  7. Once the lentils are cooked, remove the bay leaf and adjust seasoning if necessary.
  8. Serve the lentils over a bed of rice and garnish with fresh parsley.
