  • Red onion - 1 medium, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. In a large bowl, combine the chickpeas, black beans, diced red bell pepper, sliced zucchini, and sliced red onion.
  3. In a small bowl, whisk together the olive oil, minced garlic, cumin, paprika, salt, and black pepper.
  4. Pour the olive oil mixture over the legumes and vegetables, tossing to coat everything evenly.
