- Black beans - 100 grams, cooked and drained
- Red kidney beans - 100 grams, cooked and drained
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Lime juice - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the chickpeas, black beans, and red kidney beans.
- In a separate small bowl, whisk together olive oil, minced garlic, smoked paprika, cumin, salt, and black pepper.
- Pour the spice mixture over the legumes and toss until evenly coated.
- Spread the seasoned legumes onto a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the legumes are crispy and golden brown, stirring halfway through.
