  • Chickpeas - 100 grams, cooked and drained
  • Black beans - 100 grams, cooked and drained
  • Red kidney beans - 100 grams, cooked and drained
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the chickpeas, black beans, and red kidney beans.
  3. In a separate small bowl, whisk together olive oil, minced garlic, smoked paprika, cumin, salt, and black pepper.
  4. Pour the spice mixture over the legumes and toss until evenly coated.
  5. Spread the seasoned legumes onto a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20-25 minutes, or until the legumes are crispy and golden brown, stirring halfway through.
