- Whole wheat lasagna sheets - 6 pieces
- Cooked shredded chicken breast - 250 grams
- Spinach - 100 grams
- Ricotta cheese - 150 grams
- Low-fat mozzarella cheese - 100 grams, shredded
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Tomato sauce - 200 grams
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Dried oregano - 1 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent.
- Add the cooked shredded chicken and spinach to the skillet, cooking until the spinach wilts. Season with salt, pepper, and dried oregano.
- In a bowl, mix ricotta cheese with a pinch of salt and pepper until smooth.
- Spread a thin layer of tomato sauce on the bottom of a baking dish.
- Layer 2 lasagna sheets over the sauce, then spread half of the ricotta mixture on top, followed by half of the chicken and spinach mixture.
- Add another layer of tomato sauce and repeat the layers with 2 more lasagna sheets, the remaining ricotta, chicken mixture, and sauce.
- Top with the last 2 lasagna sheets, remaining tomato sauce, and sprinkle shredded mozzarella and grated Parmesan cheese on top.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the top is golden and bubbly.
- Let the lasagna cool for a few minutes before slicing and serving.
