Ingredients

  • Whole wheat lasagna sheets - 6 pieces
  • Cooked shredded chicken breast - 250 grams
  • Spinach - 100 grams
  • Ricotta cheese - 150 grams
  • Low-fat mozzarella cheese - 100 grams, shredded
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Tomato sauce - 200 grams
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Dried oregano - 1 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent.
  3. Add the cooked shredded chicken and spinach to the skillet, cooking until the spinach wilts. Season with salt, pepper, and dried oregano.
  4. In a bowl, mix ricotta cheese with a pinch of salt and pepper until smooth.
  5. Spread a thin layer of tomato sauce on the bottom of a baking dish.
  6. Layer 2 lasagna sheets over the sauce, then spread half of the ricotta mixture on top, followed by half of the chicken and spinach mixture.
  7. Add another layer of tomato sauce and repeat the layers with 2 more lasagna sheets, the remaining ricotta, chicken mixture, and sauce.
  8. Top with the last 2 lasagna sheets, remaining tomato sauce, and sprinkle shredded mozzarella and grated Parmesan cheese on top.
  9. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the top is golden and bubbly.
  10. Let the lasagna cool for a few minutes before slicing and serving.
