- Spinach - 100 grams, fresh or frozen
- Nutritional yeast - 3 tablespoons
- Fresh basil - 10 leaves, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 500 ml
- Chickpeas - 100 grams, cooked
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the sliced pumpkin and cook for about 10 minutes, stirring occasionally, until slightly tender.
- Stir in the spinach and cook until wilted. Season with salt, black pepper, and half of the chopped basil. Remove from heat.
- In a separate bowl, mix the nutritional yeast with the vegetable broth to create a sauce.
- Spread a layer of the pumpkin and spinach mixture on the bottom of a baking dish. Place two lasagna sheets on top.
- Repeat the layering process (pumpkin mixture, lasagna sheets) until all ingredients are used, finishing with a layer of the pumpkin mixture on top.
- Pour the nutritional yeast sauce over the top layer, ensuring it is evenly distributed.
- Sprinkle the cooked chickpeas over the top for added texture and protein.
- Cover the dish with aluminum foil and bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the top is golden.
- Let it cool for a few minutes before slicing. Garnish with remaining fresh basil and serve.
