  • Pumpkin - 400 grams, peeled and sliced into thin rounds
  • Lasagna sheets (gluten-free, if needed) - 6 sheets
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Spinach - 100 grams, fresh or frozen
  • Nutritional yeast - 3 tablespoons
  • Fresh basil - 10 leaves, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 500 ml
  • Chickpeas - 100 grams, cooked

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the sliced pumpkin and cook for about 10 minutes, stirring occasionally, until slightly tender.
  4. Stir in the spinach and cook until wilted. Season with salt, black pepper, and half of the chopped basil. Remove from heat.
  5. In a separate bowl, mix the nutritional yeast with the vegetable broth to create a sauce.
  6. Spread a layer of the pumpkin and spinach mixture on the bottom of a baking dish. Place two lasagna sheets on top.
  7. Repeat the layering process (pumpkin mixture, lasagna sheets) until all ingredients are used, finishing with a layer of the pumpkin mixture on top.
  8. Pour the nutritional yeast sauce over the top layer, ensuring it is evenly distributed.
  9. Sprinkle the cooked chickpeas over the top for added texture and protein.
  10. Cover the dish with aluminum foil and bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the top is golden.
  11. Let it cool for a few minutes before slicing. Garnish with remaining fresh basil and serve.
