Ingredients

  • Cooked lentils - 200 grams
  • Cooked quinoa - 100 grams
  • Chopped onion - 1 medium (about 150 grams)
  • Minced garlic - 2 cloves
  • Chopped bell pepper - 1 (about 100 grams)
  • Ground flaxseed - 2 tablespoons
  • Water - 6 tablespoons
  • Gluten-free breadcrumbs - 100 grams
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Ripe avocado - 1 medium
  • Lime juice - 1 tablespoon
  • Salt - to taste (for avocado sauce)
  • Lettuce leaves - 4
  • Tomato slices - 1 medium
  • Cucumber slices - 1 small

Steps

  1. In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes until it becomes gel-like.
  2. In a large mixing bowl, combine the cooked lentils, cooked quinoa, chopped onion, minced garlic, and chopped bell pepper.
  3. Add the flaxseed mixture, gluten-free breadcrumbs, cumin, paprika, salt, and black pepper to the lentil mixture. Mix well until fully combined.
  4. Shape the mixture into two patties, each about 1.5 cm thick.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, prepare the avocado sauce by mashing the ripe avocado in a bowl and mixing in lime juice and salt to taste.
  7. To assemble the burgers, place each patty on a lettuce leaf, top with a generous spoonful of avocado sauce, and add tomato and cucumber slices.
