- Cooked lentils - 200 grams
- Cooked quinoa - 100 grams
- Chopped onion - 1 medium (about 150 grams)
- Minced garlic - 2 cloves
- Chopped bell pepper - 1 (about 100 grams)
- Ground flaxseed - 2 tablespoons
- Water - 6 tablespoons
- Gluten-free breadcrumbs - 100 grams
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Ripe avocado - 1 medium
- Lime juice - 1 tablespoon
- Salt - to taste (for avocado sauce)
- Lettuce leaves - 4
- Tomato slices - 1 medium
- Cucumber slices - 1 small
Steps
- In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes until it becomes gel-like.
- In a large mixing bowl, combine the cooked lentils, cooked quinoa, chopped onion, minced garlic, and chopped bell pepper.
- Add the flaxseed mixture, gluten-free breadcrumbs, cumin, paprika, salt, and black pepper to the lentil mixture. Mix well until fully combined.
- Shape the mixture into two patties, each about 1.5 cm thick.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the avocado sauce by mashing the ripe avocado in a bowl and mixing in lime juice and salt to taste.
- To assemble the burgers, place each patty on a lettuce leaf, top with a generous spoonful of avocado sauce, and add tomato and cucumber slices.
