- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Chickpea flour - 50 grams
- Olive oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Paprika - 1 teaspoon

- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped

Steps
- In a bowl, soak the textured soy protein in boiling water for about 10 minutes until rehydrated, then drain and squeeze out excess water.

- In a large mixing bowl, combine the rehydrated soy protein, sautéed onion and garlic, grated carrot, chickpea flour, soy sauce, paprika, cumin, salt, black pepper, and chopped parsley. Mix well until a cohesive mixture forms.
- Shape the mixture into two patties, about 1.5 cm thick.
- In the same skillet, cook the patties over medium heat for about 4-5 minutes on each side, until golden brown and crispy.
- Toast the burger buns lightly on the skillet for about 1 minute.
- Assemble the burgers by placing a lettuce leaf and a slice of tomato on each bun, followed by the soy patties. Top with the other half of the bun and serve immediately.
