- Garlic - 2 cloves, minced
- Cilantro - 30g, chopped
- Lime juice - 1 tablespoon
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1/2, sliced
Steps
- In a mixing bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, chopped red bell pepper, jalapeño, onion, garlic, cilantro, lime juice, cumin, smoked paprika, salt, and black pepper to the mashed beans. Mix until well combined.
- Form the mixture into two equal-sized patties.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, toast the whole grain burger buns in another skillet or oven until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the spicy bean patty, tomato slices, and avocado. Top with the other half of the bun.
