- Red bell pepper - 1 large
- Yellow bell pepper - 1 large
- Chickpeas - 200 grams (cooked)
- Oats - 50 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1, sliced
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red and yellow bell peppers in half, remove the seeds and stems, and place them cut side down on a baking sheet.
- Roast the bell peppers in the oven for about 20 minutes or until the skin is blistered and charred.
- Remove the peppers from the oven and allow to cool for a few minutes, then peel off the skin and chop them into small pieces.
- In a large bowl, combine the chopped roasted peppers, cooked chickpeas, oats, minced garlic, chopped onion, cilantro, cumin, paprika, salt, and black pepper.
- Mash the mixture with a fork or a potato masher until well combined but still slightly chunky.
- Form the mixture into two burger patties.
- Heat olive oil in a skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- To assemble, place each patty on a burger bun, topped with lettuce, tomato slices, and avocado.
