Ingredients

  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Chickpeas - 200 grams (cooked)
  • Oats - 50 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red and yellow bell peppers in half, remove the seeds and stems, and place them cut side down on a baking sheet.
  3. Roast the bell peppers in the oven for about 20 minutes or until the skin is blistered and charred.
  4. Remove the peppers from the oven and allow to cool for a few minutes, then peel off the skin and chop them into small pieces.
  5. In a large bowl, combine the chopped roasted peppers, cooked chickpeas, oats, minced garlic, chopped onion, cilantro, cumin, paprika, salt, and black pepper.
  6. Mash the mixture with a fork or a potato masher until well combined but still slightly chunky.
  7. Form the mixture into two burger patties.
  8. Heat olive oil in a skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  9. To assemble, place each patty on a burger bun, topped with lettuce, tomato slices, and avocado.
