- Onion - 1 small, finely chopped
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1/2, sliced
Steps
- Preheat a skillet over medium heat.
- In a food processor, combine walnuts, cooked quinoa, rolled oats, minced garlic, chopped onion, paprika, cumin, salt, and black pepper. Pulse until the mixture is well combined but still has some texture.
- Form the mixture into two equal-sized patties.
- Add olive oil to the heated skillet and cook the patties for about 5-7 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, toast the burger buns in another pan until lightly browned.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the walnut patty, sliced tomato, and avocado. Top with the other half of the bun.
