  • Chickpea flour - 50 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Avocado - 1, sliced (for serving)
  • Whole grain burger buns - 2

Steps

  1. In a large bowl, combine the sweet corn, cooked quinoa, red onion, garlic, cilantro, lime juice, salt, black pepper, and paprika. Mash slightly with a fork or potato masher until mixed but still chunky.
  2. Add the chickpea flour to the mixture and stir until well combined. If the mixture is too wet, add a little more chickpea flour until you can form patties.
  3. Divide the mixture into two equal portions and shape each into a burger patty.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and crispy.
  5. Toast the whole grain burger buns lightly in the same skillet, if desired.
  6. Assemble the burgers by placing the corn patties on the buns and topping with sliced avocado. Serve with your favorite side dish.
