- Cooked quinoa - 100 grams
- Chickpea flour - 50 grams
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Avocado - 1, sliced (for serving)
- Whole grain burger buns - 2
Steps
- In a large bowl, combine the sweet corn, cooked quinoa, red onion, garlic, cilantro, lime juice, salt, black pepper, and paprika. Mash slightly with a fork or potato masher until mixed but still chunky.
- Add the chickpea flour to the mixture and stir until well combined. If the mixture is too wet, add a little more chickpea flour until you can form patties.
- Divide the mixture into two equal portions and shape each into a burger patty.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and crispy.
- Toast the whole grain burger buns lightly in the same skillet, if desired.
- Assemble the burgers by placing the corn patties on the buns and topping with sliced avocado. Serve with your favorite side dish.
