- Mandioca (cassava) - 300 grams
- Chickpeas (cooked) - 100 grams
- Red onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Fresh parsley (chopped) - 2 tablespoons
- Olive oil - 2 tablespoons
- Lime juice - 1 tablespoon
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Whole wheat flour - 2 tablespoons
- Burger buns - 2
- Lettuce leaves - 2
- Tomato slices - 1 medium
Steps
- Peel and chop the mandioca into chunks, then boil in salted water for about 20 minutes or until tender. Drain and let cool.
- In a mixing bowl, mash the cooked mandioca with a fork or potato masher until smooth.
- Add the cooked chickpeas, finely chopped red onion, minced garlic, chopped parsley, olive oil, lime juice, cumin, salt, and black pepper to the bowl. Mix well until all ingredients are fully combined.
- Gradually add the whole wheat flour to the mixture until you achieve a consistency that holds together well (you may not need all the flour).
- Divide the mixture into two equal portions and shape them into patties.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook each patty for about 5-7 minutes on each side until golden brown and crispy.
- Toast the burger buns lightly in the same skillet or in a toaster.
- Assemble the burgers by placing a lettuce leaf and a tomato slice on the bottom half of each bun, followed by the cooked patty. Top with any additional condiments or toppings you prefer, then cover with the top half of the bun.
