Ingredients
- Green jackfruit (canned or fresh) - 400 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 small, diced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Breadcrumbs (preferably whole wheat) - 1/2 cup
- Fresh parsley - 2 tablespoons, chopped
- Burger buns - 2
- Avocado - 1, sliced
- Lettuce leaves - 2
- Tomato - 1, sliced
Steps
- If using fresh jackfruit, peel and chop it into chunks. If using canned jackfruit, drain and rinse it well.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté for about 5 minutes until softened.
- Add the jackfruit to the skillet, along with paprika, cumin, salt, and black pepper. Cook for another 10 minutes, stirring occasionally, until the jackfruit is tender.
- Remove the skillet from heat and let it cool slightly. Then, use a fork to shred the jackfruit into smaller pieces.
- Stir in the breadcrumbs and chopped parsley into the shredded jackfruit mixture. If the mixture is too wet, add more breadcrumbs until it holds together.
- Form the mixture into 2 patties. Heat the remaining olive oil in the skillet over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown.
- Toast the burger buns while the patties are cooking.
- Assemble the burgers by placing a jackfruit patty on each bun, topped with sliced avocado, lettuce, and tomato.
