Ingredients

  • Green jackfruit (canned or fresh) - 400 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 small, diced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Breadcrumbs (preferably whole wheat) - 1/2 cup
  • Fresh parsley - 2 tablespoons, chopped
  • Burger buns - 2
  • Avocado - 1, sliced
  • Lettuce leaves - 2
  • Tomato - 1, sliced

Steps

  1. If using fresh jackfruit, peel and chop it into chunks. If using canned jackfruit, drain and rinse it well.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté for about 5 minutes until softened.
  3. Add the jackfruit to the skillet, along with paprika, cumin, salt, and black pepper. Cook for another 10 minutes, stirring occasionally, until the jackfruit is tender.
  4. Remove the skillet from heat and let it cool slightly. Then, use a fork to shred the jackfruit into smaller pieces.
  5. Stir in the breadcrumbs and chopped parsley into the shredded jackfruit mixture. If the mixture is too wet, add more breadcrumbs until it holds together.
  6. Form the mixture into 2 patties. Heat the remaining olive oil in the skillet over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown.
  7. Toast the burger buns while the patties are cooking.
  8. Assemble the burgers by placing a jackfruit patty on each bun, topped with sliced avocado, lettuce, and tomato.
