Ingredients

  • Fresh spinach - 200 grams
  • Canned chickpeas - 200 grams, drained and rinsed
  • Breadcrumbs - 50 grams
  • Grated Parmesan cheese - 30 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced
  • Homemade or store-bought sauce - as needed

Steps

  1. In a large skillet, heat a teaspoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the fresh spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine the chickpeas, sautéed onion and spinach mixture, breadcrumbs, grated Parmesan, cumin, paprika, salt, and black pepper. Mash the mixture with a fork or potato masher until combined but still slightly chunky.
  4. Form the mixture into two equal patties, pressing firmly to hold their shape.
  5. In the same skillet, heat the remaining olive oil over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
  6. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  7. Assemble the burgers by placing a spinach patty on each bun, topping with lettuce, tomato slices, avocado, and your choice of sauce.
