- Fresh spinach - 200 grams
- Canned chickpeas - 200 grams, drained and rinsed
- Breadcrumbs - 50 grams
- Grated Parmesan cheese - 30 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Homemade or store-bought sauce - as needed
Steps
- In a large skillet, heat a teaspoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the fresh spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
- In a mixing bowl, combine the chickpeas, sautéed onion and spinach mixture, breadcrumbs, grated Parmesan, cumin, paprika, salt, and black pepper. Mash the mixture with a fork or potato masher until combined but still slightly chunky.
- Form the mixture into two equal patties, pressing firmly to hold their shape.
- In the same skillet, heat the remaining olive oil over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
- Assemble the burgers by placing a spinach patty on each bun, topping with lettuce, tomato slices, avocado, and your choice of sauce.
