- Portobello mushrooms - 200 grams
- Chickpeas - 100 grams, cooked
- Oats - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- In a food processor, combine the sautéed onion and garlic, Portobello mushrooms, cooked chickpeas, oats, soy sauce, cumin, paprika, salt, and pepper. Blend until a coarse mixture forms.
- Transfer the mixture to a bowl and stir in the chopped parsley. Form the mixture into two burger patties.
- Place the patties on a baking sheet lined with parchment paper and bake for 15-20 minutes, flipping halfway through, until golden brown.
- While the patties are baking, prepare the burger buns by toasting them lightly.
- Assemble the burgers by spreading vegan mayonnaise on the bottom bun, adding lettuce, the mushroom patty, sliced tomato, and avocado. Top with the other half of the bun.
- Serve immediately with your favorite side dish.
