Ingredients

  • Portobello mushrooms - 200 grams
  • Chickpeas - 100 grams, cooked
  • Oats - 50 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. In a food processor, combine the sautéed onion and garlic, Portobello mushrooms, cooked chickpeas, oats, soy sauce, cumin, paprika, salt, and pepper. Blend until a coarse mixture forms.
  4. Transfer the mixture to a bowl and stir in the chopped parsley. Form the mixture into two burger patties.
  5. Place the patties on a baking sheet lined with parchment paper and bake for 15-20 minutes, flipping halfway through, until golden brown.
  6. While the patties are baking, prepare the burger buns by toasting them lightly.
  7. Assemble the burgers by spreading vegan mayonnaise on the bottom bun, adding lettuce, the mushroom patty, sliced tomato, and avocado. Top with the other half of the bun.
  8. Serve immediately with your favorite side dish.
