- Brazil nuts - 150 grams
- Cooked quinoa - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cilantro - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Egg - 1 large
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Whole wheat breadcrumbs - 50 grams
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1, sliced
Steps
- Preheat your oven to 180°C (350°F).
- In a food processor, pulse the Brazil nuts until finely chopped but not a paste.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- In a large bowl, combine the chopped Brazil nuts, cooked quinoa, sautéed onion and garlic, chopped parsley, cilantro, egg, salt, black pepper, and paprika. Mix until well combined.
- Gradually add the breadcrumbs to the mixture until the batter holds together but is not too dry.
- Form the mixture into 2 burger patties.
- Heat the remaining tablespoon of olive oil in the skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
- Toast the burger buns in the oven for 3-4 minutes.
- Assemble the burgers by placing a lettuce leaf, a Brazil nut patty, a slice of tomato, and avocado on each bun. Top with the other half of the bun.
