- Raw cashews - 150 grams
- Cooked quinoa - 100 grams
- Chopped onion - 50 grams
- Minced garlic - 2 cloves
- Chopped fresh parsley - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Flour (whole wheat or chickpea) - 2 tablespoons
- Olive oil - 2 tablespoons (for cooking)
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato slices - 4
- Avocado slices - 1 (optional)
Steps
- Soak the raw cashews in water for at least 2 hours or overnight, then drain and rinse them.
- In a food processor, combine soaked cashews, cooked quinoa, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Blend until the mixture is well combined but still slightly chunky.
- Transfer the mixture to a bowl and stir in the flour until the mixture holds together. If it’s too wet, add a bit more flour.
- Form the mixture into 2 patties.
- Heat olive oil in a skillet over medium heat. Cook each patty for about 4-5 minutes on each side, until golden brown.
- To assemble, place each patty on a whole grain burger bun, top with lettuce, tomato slices, and avocado if desired.
