Ingredients

  • Raw cashews - 150 grams
  • Cooked quinoa - 100 grams
  • Chopped onion - 50 grams
  • Minced garlic - 2 cloves
  • Chopped fresh parsley - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flour (whole wheat or chickpea) - 2 tablespoons
  • Olive oil - 2 tablespoons (for cooking)
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato slices - 4
  • Avocado slices - 1 (optional)

Steps

  1. Soak the raw cashews in water for at least 2 hours or overnight, then drain and rinse them.
  2. In a food processor, combine soaked cashews, cooked quinoa, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Blend until the mixture is well combined but still slightly chunky.
  3. Transfer the mixture to a bowl and stir in the flour until the mixture holds together. If it’s too wet, add a bit more flour.
  4. Form the mixture into 2 patties.
  5. Heat olive oil in a skillet over medium heat. Cook each patty for about 4-5 minutes on each side, until golden brown.
  6. To assemble, place each patty on a whole grain burger bun, top with lettuce, tomato slices, and avocado if desired.
