Ingredients

  • Eggplant - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cooked quinoa - 100 grams
  • Chickpeas - 100 grams, mashed
  • Breadcrumbs - 50 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into rounds, brush both sides with olive oil, and place them on a baking sheet. Roast for 20 minutes, flipping halfway through, until tender and lightly browned.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
  4. In a mixing bowl, combine the roasted eggplant, sautéed onion and garlic, cooked quinoa, mashed chickpeas, breadcrumbs, parsley, cumin, paprika, salt, and black pepper. Mix until well combined.
  5. Form the mixture into two equal-sized patties.
  6. In the same skillet, add the remaining tablespoon of olive oil and cook the patties over medium heat for about 5 minutes on each side, or until golden brown and heated through.
  7. To assemble the burgers, place each patty on a bun, top with lettuce, tomato slices, and vegan mayonnaise. Serve immediately.
