- Eggplant - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cooked quinoa - 100 grams
- Chickpeas - 100 grams, mashed
- Breadcrumbs - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into rounds, brush both sides with olive oil, and place them on a baking sheet. Roast for 20 minutes, flipping halfway through, until tender and lightly browned.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
- In a mixing bowl, combine the roasted eggplant, sautéed onion and garlic, cooked quinoa, mashed chickpeas, breadcrumbs, parsley, cumin, paprika, salt, and black pepper. Mix until well combined.
- Form the mixture into two equal-sized patties.
- In the same skillet, add the remaining tablespoon of olive oil and cook the patties over medium heat for about 5 minutes on each side, or until golden brown and heated through.
- To assemble the burgers, place each patty on a bun, top with lettuce, tomato slices, and vegan mayonnaise. Serve immediately.
