  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Ground flaxseed - 1 tablespoon
  • Water - 2 tablespoons
  • Oats (rolled) - 50 grams
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato slices - 4
  • Avocado slices - 4

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potato into small cubes and boil them in water for about 10 minutes or until tender.
  3. In a separate pot, cook the quinoa according to package instructions (usually about 15 minutes).
  4. Once the sweet potato is cooked, drain and mash it in a large bowl.
  5. Add the cooked quinoa, chickpeas, garlic powder, onion powder, cumin, paprika, salt, black pepper, olive oil, and ground flaxseed mixed with water to the mashed sweet potato.
  6. Mix everything together until well combined, then fold in the rolled oats until the mixture holds together.
  7. Form the mixture into 2 equal-sized patties.
  8. Place the patties on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through.
  9. While the patties are baking, prepare the burger buns and toppings: wash the lettuce, slice the tomatoes, and avocados.
  10. Once the patties are done, assemble your burgers by placing a patty on each bun and topping with lettuce, tomato, and avocado slices.
