- Onion powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Ground flaxseed - 1 tablespoon
- Water - 2 tablespoons
- Oats (rolled) - 50 grams
- Burger buns - 2
- Lettuce leaves - 2
- Tomato slices - 4
- Avocado slices - 4
Steps
- Preheat the oven to 200°C (400°F).
- Peel and dice the sweet potato into small cubes and boil them in water for about 10 minutes or until tender.
- In a separate pot, cook the quinoa according to package instructions (usually about 15 minutes).
- Once the sweet potato is cooked, drain and mash it in a large bowl.
- Add the cooked quinoa, chickpeas, garlic powder, onion powder, cumin, paprika, salt, black pepper, olive oil, and ground flaxseed mixed with water to the mashed sweet potato.
- Mix everything together until well combined, then fold in the rolled oats until the mixture holds together.
- Form the mixture into 2 equal-sized patties.
- Place the patties on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through.
- While the patties are baking, prepare the burger buns and toppings: wash the lettuce, slice the tomatoes, and avocados.
- Once the patties are done, assemble your burgers by placing a patty on each bun and topping with lettuce, tomato, and avocado slices.
