- Chickpeas (cooked) - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Cornstarch - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Avocado - 1 small, sliced
- Ketchup - for serving
Steps
- Peel and chop the potatoes into cubes, then boil them in salted water until tender, about 15 minutes.
- Drain the potatoes and mash them in a bowl until smooth.
- In a pan, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the sautéed onions and garlic to the mashed potatoes along with the chickpeas, parsley, cornstarch, salt, black pepper, and paprika. Mix until well combined.
- Form the mixture into two burger patties.
- Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side, until golden brown.
- Toast the burger buns in the same skillet for 1-2 minutes until slightly crispy.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the patty, sliced tomato, and avocado. Top with ketchup and place the top bun on.
- Serve immediately.
