Ingredients

  • Swiss chard - 200 grams, chopped
  • Cooked quinoa - 100 grams
  • Chickpeas - 100 grams, drained and rinsed
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Ground flaxseed - 2 tablespoons
  • Water - 4 tablespoons
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Avocado - 1, sliced
  • Tomato - 1, sliced
  • Lettuce leaves - 2

Steps

  1. In a small bowl, mix ground flaxseed with water and let it sit for 5 minutes to create a flax egg.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, and sauté until onion is translucent, about 3-4 minutes.
  3. Add the chopped Swiss chard to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a large bowl, combine cooked quinoa, chickpeas (mashed lightly), sautéed Swiss chard mixture, flax egg, cumin, paprika, salt, and pepper. Mix well until combined.
  5. Form the mixture into 2 patties, about 1.5 cm thick.
  6. In the same skillet, add the remaining tablespoon of olive oil and heat over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.
  7. Toast the whole wheat burger buns in the skillet for 1-2 minutes, if desired.
  8. Assemble the burgers by placing a patty on each bun and topping with sliced avocado, tomato, and lettuce.
