Ingredients
- Swiss chard - 200 grams, chopped
- Cooked quinoa - 100 grams
- Chickpeas - 100 grams, drained and rinsed
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Ground flaxseed - 2 tablespoons
- Water - 4 tablespoons
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat burger buns - 2
- Avocado - 1, sliced
- Tomato - 1, sliced
- Lettuce leaves - 2
Steps
- In a small bowl, mix ground flaxseed with water and let it sit for 5 minutes to create a flax egg.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, and sauté until onion is translucent, about 3-4 minutes.
- Add the chopped Swiss chard to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine cooked quinoa, chickpeas (mashed lightly), sautéed Swiss chard mixture, flax egg, cumin, paprika, salt, and pepper. Mix well until combined.
- Form the mixture into 2 patties, about 1.5 cm thick.
- In the same skillet, add the remaining tablespoon of olive oil and heat over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.
- Toast the whole wheat burger buns in the skillet for 1-2 minutes, if desired.
- Assemble the burgers by placing a patty on each bun and topping with sliced avocado, tomato, and lettuce.
