- Brown rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomatoes - 2 medium, chopped
- Vegetable broth - 400 ml
- Turmeric - 1 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the brown rice under cold water until the water runs clear, then set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced bell pepper, carrot, and zucchini, and cook for 5-7 minutes until the vegetables begin to soften.
- Add the chopped tomatoes, turmeric, paprika, cumin, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes start to break down.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the rinsed brown rice, stir well, and reduce the heat to low. Cover and simmer for 30 minutes or until the rice is cooked and has absorbed most of the liquid.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh cilantro before serving.
