- Cauliflower - 300 grams, riced
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Bell pepper - 1 medium, diced (any color)
- Tomato - 1 medium, diced
- Chicken broth - 250 ml, low sodium
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic to the skillet, sautéing until softened and fragrant, about 3-4 minutes.
- Add the diced bell pepper and tomato, stirring for another 2-3 minutes until they begin to soften.
- Season the chicken thighs with paprika, cumin, salt, and black pepper, then add them to the skillet, browning on both sides for about 5-6 minutes.
- Pour in the chicken broth and bring to a simmer, then cover and cook for 10 minutes until the chicken is cooked through.
- Remove the chicken from the skillet and set aside. Stir in the riced cauliflower, mixing well with the broth and vegetables.
- Return the chicken to the skillet, cover, and cook for an additional 5 minutes until the cauliflower is tender.
- Garnish with fresh parsley before serving.
