Ingredients

  • Chicken thighs - 400 grams, bone-in, skin-on
  • Long-grain rice - 1 cup (200 grams)
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, chopped
  • Tomato - 1 medium, diced
  • Chicken broth - 2 cups (500 ml)
  • Olive oil - 2 tablespoons
  • Saffron threads - 1/4 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
  3. Stir in the chopped bell pepper, diced tomato, paprika, black pepper, and salt. Cook for another 3 minutes.
  4. Add the rice to the pot, stirring well to coat it with the mixture.
  5. In a small bowl, dissolve the saffron in 1/4 cup of warm chicken broth, then add it to the pot along with the remaining broth.
  6. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 25 minutes or until the rice is cooked and has absorbed the liquid.
  7. Remove from heat and let it rest for 5 minutes before serving. Garnish with fresh parsley.
