- Chicken thighs - 400 grams, bone-in, skin-on
- Long-grain rice - 1 cup (200 grams)
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, chopped
- Tomato - 1 medium, diced
- Chicken broth - 2 cups (500 ml)
- Olive oil - 2 tablespoons
- Saffron threads - 1/4 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
- Stir in the chopped bell pepper, diced tomato, paprika, black pepper, and salt. Cook for another 3 minutes.
- Add the rice to the pot, stirring well to coat it with the mixture.
- In a small bowl, dissolve the saffron in 1/4 cup of warm chicken broth, then add it to the pot along with the remaining broth.
- Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 25 minutes or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it rest for 5 minutes before serving. Garnish with fresh parsley.
