Ingredients

  • Young chicken (galeto) - 500 grams
  • Garlic - 4 cloves, minced
  • Lemon juice - 60 ml
  • Olive oil - 30 ml
  • Fresh parsley - 30 grams, chopped
  • Fresh thyme - 15 grams, chopped
  • Salt - 5 grams
  • Black pepper - 2 grams
  • Paprika - 5 grams
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced

Steps

  1. In a mixing bowl, combine minced garlic, lemon juice, olive oil, chopped parsley, thyme, salt, black pepper, and paprika to create the marinade.
  2. Add the young chicken to the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and place it on the grill. Cook for about 8-10 minutes per side, or until the internal temperature reaches 75°C (165°F).
  5. While the chicken is grilling, toss the sliced red bell pepper and zucchini in a little olive oil, salt, and pepper, and grill them for about 5-7 minutes until they are tender.
  6. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing.
  7. Serve the grilled chicken with the grilled vegetables on the side.
