- Young chicken (galeto) - 500 grams
- Garlic - 4 cloves, minced
- Lemon juice - 60 ml
- Olive oil - 30 ml
- Fresh parsley - 30 grams, chopped
- Fresh thyme - 15 grams, chopped
- Salt - 5 grams
- Black pepper - 2 grams
- Paprika - 5 grams
- Red bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
Steps
- In a mixing bowl, combine minced garlic, lemon juice, olive oil, chopped parsley, thyme, salt, black pepper, and paprika to create the marinade.
- Add the young chicken to the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and place it on the grill. Cook for about 8-10 minutes per side, or until the internal temperature reaches 75°C (165°F).
- While the chicken is grilling, toss the sliced red bell pepper and zucchini in a little olive oil, salt, and pepper, and grill them for about 5-7 minutes until they are tender.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing.
- Serve the grilled chicken with the grilled vegetables on the side.
