Ingredients

  • Chayote (Chuchu) - 300 grams, spiralized

  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 40 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Basil leaves - a handful, fresh, for garnish

Steps

  1. Spiralize the chayote using a spiralizer to create fusilli-like shapes.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the spiralized chayote to the skillet and cook for 5-7 minutes, stirring occasionally until slightly tender.
  4. Stir in the halved cherry tomatoes and fresh spinach. Cook for an additional 3-4 minutes until the spinach wilts and the tomatoes soften.
