  • Fresh basil - 10 leaves, torn
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved
  • Pine nuts - 30 grams, toasted

Steps

  1. Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the extra virgin olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the chopped sun-dried tomatoes and cherry tomatoes, cooking for an additional 3-4 minutes until the tomatoes are softened.
  5. Once the pasta is ready, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the tomato mixture.
  6. Toss everything together, adding reserved pasta water as needed to create a light sauce.
