  • Carrot - 1 medium, grated
  • Tomato puree - 200 grams
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 500 milliliters

Steps

  1. In a large pot, bring salted water to a boil and cook the fusilli according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated carrot to the skillet, cooking for an additional 2-3 minutes until fragrant.
  4. Increase the heat to medium-high and add the ground beef, cooking until browned, about 5-7 minutes. Break it up with a spoon as it cooks.
  5. Stir in the tomato puree, dried oregano, salt, and black pepper. Add the water and bring the mixture to a simmer, reducing heat to low. Let it cook for 20 minutes, stirring occasionally.
  6. Once the ragu is thickened and flavorful, toss the cooked fusilli into the skillet, mixing well to combine.
  7. Remove from heat, garnish with fresh parsley, and serve immediately.
