Ingredients

  • Fusilli pasta - 200 grams
  • Chickpeas (cooked) - 100 grams
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh basil - 5 leaves, chopped

Steps

  1. Bring a large pot of salted water to a boil, then add the fusilli pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the diced red bell pepper, zucchini, and carrot to the skillet. Sauté for about 5-7 minutes until vegetables are tender.
  4. Stir in the cooked chickpeas and spinach, cooking for an additional 3-4 minutes until the spinach wilts.
  5. Once the pasta is done, drain it and add it to the skillet with the vegetables. Mix well to combine all the ingredients.
  6. Season with salt, black pepper, and chopped fresh basil. Toss everything together and cook for another minute.
  7. Remove from heat and serve warm, topped with grated Parmesan cheese.
