- Fusilli pasta - 200 grams
- Chickpeas (cooked) - 100 grams
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Spinach - 100 grams, fresh
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh basil - 5 leaves, chopped
Steps
- Bring a large pot of salted water to a boil, then add the fusilli pasta and cook according to package instructions until al dente, about 8-10 minutes.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper, zucchini, and carrot to the skillet. Sauté for about 5-7 minutes until vegetables are tender.
- Stir in the cooked chickpeas and spinach, cooking for an additional 3-4 minutes until the spinach wilts.
- Once the pasta is done, drain it and add it to the skillet with the vegetables. Mix well to combine all the ingredients.
- Season with salt, black pepper, and chopped fresh basil. Toss everything together and cook for another minute.
- Remove from heat and serve warm, topped with grated Parmesan cheese.
