- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Vegetable broth - 250 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a pan over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the fresh peas and vegetable broth, cooking for about 5 minutes until the peas are tender.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the rest.
- Add the drained pasta to the pan with the peas and toss to combine. If the mixture seems dry, add a little reserved pasta water to reach the desired consistency.
- Season with salt, black pepper, and red pepper flakes (if using).
- Remove from heat and stir in the chopped parsley before serving.
