  • Fusilli pasta - 200 grams
  • Fresh peas - 150 grams (or frozen peas)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Vegetable broth - 250 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a pan over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the fresh peas and vegetable broth, cooking for about 5 minutes until the peas are tender.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the rest.
  6. Add the drained pasta to the pan with the peas and toss to combine. If the mixture seems dry, add a little reserved pasta water to reach the desired consistency.
  7. Season with salt, black pepper, and red pepper flakes (if using).
  8. Remove from heat and stir in the chopped parsley before serving.
