- Chicken breast - 250 grams, diced

- Onion - 1 medium, finely chopped
- Bell pepper - 1, diced
- Tomato - 1 medium, diced
- Heavy cream - 100 ml
- Chicken broth - 150 ml
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Cook the fusilli pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the minced garlic, chopped onion, and diced bell pepper to the skillet. Sauté until the vegetables are soft, about 3-4 minutes.
- Stir in the diced tomato and cook for another 2 minutes until softened.
- Pour in the chicken broth and bring to a simmer. Reduce heat and stir in the heavy cream, cooking for an additional 3-4 minutes until the sauce thickens slightly.
- Add the cooked fusilli to the skillet, tossing to combine and coat the pasta in the sauce. Sprinkle in the grated Parmesan cheese and season with salt and black pepper to taste.
- Serve hot, garnished with chopped fresh parsley.
