- Cherry tomatoes - 100 grams, halved
Steps
- Soak the raw cashews in water for at least 2 hours, or overnight for best results. Drain and rinse before using.
- Cook the fusilli pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a blender or food processor, combine the soaked cashews, garlic, nutritional yeast, olive oil, vegetable broth, lemon juice, fresh basil, salt, and black pepper. Blend until smooth and creamy, adding reserved pasta water as needed to reach desired consistency.
- In a large skillet over medium heat, add the cashew sauce and simmer for about 2-3 minutes, stirring occasionally.
- Add the cooked fusilli to the skillet and toss to coat the pasta evenly with the sauce. Cook for an additional 2 minutes, allowing the pasta to absorb the flavors.
