  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese - 30 grams (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 2-3 minutes until the garlic is fragrant but not browned.
  3. Once the pasta is cooked, reserve 1 cup of the pasta water, then drain the pasta.
  4. Add the drained fusilli to the skillet with the garlic oil. Toss to combine, adding reserved pasta water a little at a time to help create a sauce.
  5. Stir in the chopped parsley, lemon juice, salt, and black pepper. Mix well to ensure the pasta is well coated with the sauce.
  6. If desired, sprinkle grated Parmesan cheese on top before serving. Serve hot and enjoy!
