- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Chicken broth - 300 ml
- Fresh cilantro - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime - 1, juiced
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Add the chicken thighs to the skillet, seasoning them with salt and black pepper. Cook for about 5-7 minutes on each side until golden brown.
- Add the pequi pulp to the skillet, stirring to combine with the chicken. Pour in the chicken broth and bring to a simmer.
- Cover the skillet and let it cook for 25-30 minutes, or until the chicken is cooked through and tender.
