  • Onion - 1 medium (about 100 grams), chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Chicken broth - 300 ml
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime - 1, juiced

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  2. Add the chicken thighs to the skillet, seasoning them with salt and black pepper. Cook for about 5-7 minutes on each side until golden brown.
  3. Add the pequi pulp to the skillet, stirring to combine with the chicken. Pour in the chicken broth and bring to a simmer.
  4. Cover the skillet and let it cook for 25-30 minutes, or until the chicken is cooked through and tender.
