  • Almond flour - 100 grams
  • Eggs - 2 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Parmesan cheese - 30 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. In a large pot, bring water to a boil and blanch the spinach for 2 minutes until wilted. Drain and cool in ice water, then squeeze out excess moisture and chop finely.
  2. In a mixing bowl, combine the almond flour, eggs, blanched spinach, salt, black pepper, and nutmeg. Mix until a dough forms.
  3. On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Cut into fettuccine strips using a sharp knife or a pasta cutter.
  4. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the fettuccine to the skillet and toss gently for about 2-3 minutes, ensuring they are coated in the garlic oil.
  6. Sprinkle grated Parmesan cheese over the fettuccine, toss again, and serve immediately, garnished with extra cheese if desired.
