Ingredients

  • Brown rice flour - 150 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Zucchini - 1 small, sliced
  • Bell pepper - 1 medium, sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil - 10 grams, chopped
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 liter

Steps

  1. In a bowl, combine brown rice flour and a pinch of salt. Make a well in the center and add the egg. Mix until a dough forms, then knead for 5 minutes until smooth.
  2. Wrap the dough in plastic wrap and let it rest for 15 minutes at room temperature.
  3. While the dough rests, bring 1 liter of water to a boil in a large pot. Add a pinch of salt.
  4. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add sliced zucchini and bell pepper to the skillet. Sauté for about 5 minutes until softened.
  6. Roll out the rested dough on a floured surface to about 2-3 mm thickness, then cut into fettuccine strips.
  7. Once the water is boiling, add the fettuccine and cook for about 3-4 minutes until al dente. Drain and reserve a small amount of pasta water.
  8. Add the cooked fettuccine to the skillet with the vegetables, tossing to combine. If needed, add a little reserved pasta water to create a sauce.
  9. Stir in cherry tomatoes and fresh basil, cooking for an additional 2 minutes.
  10. Season with salt and black pepper to taste, then serve topped with grated Parmesan cheese.
