Ingredients
- Fettuccine - 150 grams
- Firm tofu - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Bell pepper - 1 medium, sliced
- Tomato - 1 medium, diced
- Spinach - 100 grams, fresh
- Nutritional yeast - 2 tablespoons
- Soy sauce - 1 tablespoon
- Fresh basil - 10 leaves, chopped
- Salt - to taste
- Black pepper - to taste
- Water - 1 liter for cooking pasta
Steps
- Bring 1 liter of water to a boil in a large pot. Add a pinch of salt and cook the fettuccine according to package instructions until al dente, usually around 8-10 minutes.
- While the pasta is cooking, press the tofu to remove excess moisture, then cut it into small cubes.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced bell pepper to the skillet and cook for another 2-3 minutes until the pepper is tender.
- Stir in the diced tomato and cubed tofu. Cook for 5-7 minutes, allowing the tofu to absorb the flavors, stirring occasionally.
- Add the fresh spinach and cook until wilted, about 2-3 minutes. Then, mix in the nutritional yeast and soy sauce, and season with salt and black pepper to taste.
- Once the fettuccine is done cooking, drain it and add it to the skillet. Toss everything together gently to combine.
- Finally, stir in the chopped basil and serve immediately, garnished with additional basil if desired.
