- Heavy cream - 100 ml
- Parmesan cheese - 50 grams, grated
- Lemon juice - 1 tablespoon
- Fresh dill - 2 teaspoons, chopped
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 100 grams, halved
Steps
- Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the salmon fillet to the skillet and cook for about 3-4 minutes per side until golden brown and cooked through. Remove from the skillet and flake into bite-sized pieces.
- In the same skillet, lower the heat and pour in the heavy cream, stirring to combine with the garlic. Let it simmer for 2-3 minutes.
- Add the grated Parmesan cheese, lemon juice, and fresh dill to the sauce, stirring until the cheese melts and the sauce is creamy. If it's too thick, add a little reserved pasta water to reach your desired consistency.
- Add the cooked fettuccine and flaked salmon to the skillet, tossing everything together to coat the pasta with the sauce. Season with salt and black pepper to taste.
- Lastly, gently fold in the halved cherry tomatoes and heat for another minute before serving.
