Ingredients

  • Fettuccine - 200 grams
  • Fresh salmon fillet - 200 grams

  • Heavy cream - 100 ml
  • Parmesan cheese - 50 grams, grated
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 teaspoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the salmon fillet to the skillet and cook for about 3-4 minutes per side until golden brown and cooked through. Remove from the skillet and flake into bite-sized pieces.
  4. In the same skillet, lower the heat and pour in the heavy cream, stirring to combine with the garlic. Let it simmer for 2-3 minutes.
  5. Add the grated Parmesan cheese, lemon juice, and fresh dill to the sauce, stirring until the cheese melts and the sauce is creamy. If it's too thick, add a little reserved pasta water to reach your desired consistency.
  6. Add the cooked fettuccine and flaked salmon to the skillet, tossing everything together to coat the pasta with the sauce. Season with salt and black pepper to taste.
  7. Lastly, gently fold in the halved cherry tomatoes and heat for another minute before serving.
