Ingredients

  • Fettuccine - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 milliliters
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Parmesan cheese - 50 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Lower the heat and stir in the heavy cream, lemon juice, and lemon zest. Allow the mixture to simmer for about 3-4 minutes, stirring occasionally.
  4. Add the grated Parmesan cheese to the sauce and stir until melted and well combined. Season with salt and black pepper to taste.
  5. Once the fettuccine is cooked, drain it and add it directly to the skillet with the sauce. Toss to combine, ensuring the pasta is well coated with the sauce.
  6. Remove from heat and garnish with chopped fresh parsley before serving.
