Ingredients

  • Fettuccine - 150 grams

  • Mixed mushrooms (shiitake, cremini, and button) - 200 grams, sliced
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Boil a pot of salted water and cook the fettuccine according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Add the sliced mushrooms and cook for 5-7 minutes until they are golden brown and softened.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Once the fettuccine is done, drain it and reserve a small cup of the pasta water.
  7. Add the drained fettuccine to the skillet with the mushrooms and spinach, tossing to combine.
  8. If the pasta seems dry, add a splash of the reserved pasta water.
  9. Season with salt, black pepper, and lemon juice, and mix well.
  10. Serve immediately, topped with grated Parmesan cheese and chopped parsley.
