- Mixed mushrooms (shiitake, cremini, and button) - 200 grams, sliced
- Spinach - 100 grams, fresh
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Boil a pot of salted water and cook the fettuccine according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Add the sliced mushrooms and cook for 5-7 minutes until they are golden brown and softened.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Once the fettuccine is done, drain it and reserve a small cup of the pasta water.
- Add the drained fettuccine to the skillet with the mushrooms and spinach, tossing to combine.
- If the pasta seems dry, add a splash of the reserved pasta water.
- Season with salt, black pepper, and lemon juice, and mix well.
- Serve immediately, topped with grated Parmesan cheese and chopped parsley.
