Ingredients

  • Fettuccine - 200 grams
  • Broccoli florets - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. In the last 3 minutes of cooking the pasta, add the broccoli florets to the boiling water with the pasta.
  3. Once cooked, reserve 1/2 cup of the pasta water, then drain the fettuccine and broccoli.
  4. In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  5. Add the drained fettuccine and broccoli to the pot with the garlic. Toss gently to combine.
  6. If the mixture is too dry, add a little reserved pasta water to achieve desired consistency.
  7. Season with salt, black pepper, and red pepper flakes (if using). Toss again to combine.
  8. Remove from heat and stir in the grated Parmesan cheese and lemon juice.
  9. Serve immediately, garnished with extra Parmesan if desired.
