- Fettuccine - 200 grams
- Broccoli florets - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated
- Red pepper flakes - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, usually about 8-10 minutes.
- In the last 3 minutes of cooking the pasta, add the broccoli florets to the boiling water with the pasta.
- Once cooked, reserve 1/2 cup of the pasta water, then drain the fettuccine and broccoli.
- In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the drained fettuccine and broccoli to the pot with the garlic. Toss gently to combine.
- If the mixture is too dry, add a little reserved pasta water to achieve desired consistency.
- Season with salt, black pepper, and red pepper flakes (if using). Toss again to combine.
- Remove from heat and stir in the grated Parmesan cheese and lemon juice.
- Serve immediately, garnished with extra Parmesan if desired.
