Ingredients

  • Black beans - 200 grams
  • Vegetable broth - 500 ml

  • Garlic - 3 cloves, minced
  • Carrots - 2 medium, diced
  • Bell pepper - 1 medium, diced
  • Smoked paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Bay leaves - 2
  • Tomato paste - 2 tablespoons
  • Collard greens - 100 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Rice - 150 grams, for serving

Steps

  1. Rinse the black beans under cold water and soak them in water for at least 4 hours or overnight.
  2. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
  3. Add the diced carrots and bell pepper to the pot and cook for another 5 minutes, stirring occasionally.
  4. Stir in the smoked paprika, cumin, and tomato paste, cooking for an additional 2 minutes until fragrant.
  5. Drain the soaked black beans and add them to the pot along with the vegetable broth and bay leaves.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for about 30-40 minutes, or until the beans are tender.
  7. In the last 10 minutes of cooking, stir in the chopped collard greens, cooking until wilted. Season with salt and black pepper to taste.
  8. While the feijoada is simmering, cook the rice according to package instructions.
  9. Serve the feijoada hot over a bed of rice.
