- Cumin - 1 teaspoon
- Bay leaves - 2
- Tomato paste - 2 tablespoons
- Collard greens - 100 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Rice - 150 grams, for serving
Steps
- Rinse the black beans under cold water and soak them in water for at least 4 hours or overnight.
- In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
- Add the diced carrots and bell pepper to the pot and cook for another 5 minutes, stirring occasionally.
- Stir in the smoked paprika, cumin, and tomato paste, cooking for an additional 2 minutes until fragrant.
- Drain the soaked black beans and add them to the pot along with the vegetable broth and bay leaves.
- Bring the mixture to a boil, then reduce the heat to low and simmer for about 30-40 minutes, or until the beans are tender.
- In the last 10 minutes of cooking, stir in the chopped collard greens, cooking until wilted. Season with salt and black pepper to taste.
- While the feijoada is simmering, cook the rice according to package instructions.
- Serve the feijoada hot over a bed of rice.
