Ingredients
- Pork shoulder - 300 grams, cut into cubes
- Smoked sausage (chorizo or linguiça) - 150 grams, sliced
- Bacon - 100 grams, diced
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Red bell pepper - 1, chopped
- Tomato paste - 2 tablespoons
- Beef broth - 500 ml
- Bay leaves - 2
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Olive oil - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove and set aside, leaving the fat in the pot.
- In the same pot, add the pork shoulder cubes and brown on all sides. Once browned, remove and set aside.
- Add the sliced sausage to the pot and cook for 3-4 minutes. Remove and set aside with the other meats.
- Add the chopped onion, garlic, and red bell pepper to the pot and sauté until softened, about 5 minutes.
- Stir in the tomato paste, paprika, cumin, black pepper, and bay leaves. Mix well for about a minute.
- Return all the meats to the pot and pour in the beef broth. Bring to a boil, then reduce the heat to low.
- Cover and simmer for 60 minutes, stirring occasionally, until the meats are tender and flavors meld together.
- Season with salt to taste, remove bay leaves, and serve hot, garnished with fresh parsley.
