- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Wash the green beans thoroughly and trim the ends.
- In a medium pot, bring water to a boil and blanch the green beans for 3-4 minutes until bright green and tender-crisp.
- Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain again.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced tomato and cook for another 2-3 minutes until softened.
- Add the blanched green beans to the skillet, seasoning with salt and black pepper. Toss to combine and cook for 5 more minutes, allowing flavors to meld.
- Remove from heat and stir in the chopped parsley and lemon juice before serving.
