  • Cornmeal - 50 grams
  • Eggs - 2 large
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large skillet, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the rendered fat in the skillet.
  2. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the cooked black beans to the skillet and stir to combine. Season with salt and black pepper to taste.
  4. Sprinkle the cornmeal over the bean mixture and stir well, allowing it to toast slightly for about 2-3 minutes.
