- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Skewers - 4 (soaked in water if wooden)
Steps
- Press the tofu between paper towels to remove excess moisture for about 15 minutes.
- While the tofu is pressing, chop the red bell pepper, zucchini, and red onion into bite-sized pieces.
- In a bowl, whisk together olive oil, soy sauce, lime juice, garlic powder, paprika, cumin, salt, and black pepper to create the marinade.
- Cut the pressed tofu into 1-inch cubes and add them to the marinade, making sure to coat all sides. Let it marinate for at least 10 minutes.
- Preheat a grill or grill pan over medium heat.
- Thread the marinated tofu and chopped vegetables onto the skewers, alternating between tofu and vegetables.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the tofu is golden and the vegetables are tender.
- Remove from the grill and serve hot with a squeeze of lime or your favorite dipping sauce.
