Ingredients

  • Firm tofu - 250 grams
  • Red bell pepper - 1 medium
  • Zucchini - 1 medium
  • Red onion - 1 medium
  • Olive oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. Press the tofu between paper towels to remove excess moisture for about 15 minutes.
  2. While the tofu is pressing, chop the red bell pepper, zucchini, and red onion into bite-sized pieces.
  3. In a bowl, whisk together olive oil, soy sauce, lime juice, garlic powder, paprika, cumin, salt, and black pepper to create the marinade.
  4. Cut the pressed tofu into 1-inch cubes and add them to the marinade, making sure to coat all sides. Let it marinate for at least 10 minutes.
  5. Preheat a grill or grill pan over medium heat.
  6. Thread the marinated tofu and chopped vegetables onto the skewers, alternating between tofu and vegetables.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the tofu is golden and the vegetables are tender.
  8. Remove from the grill and serve hot with a squeeze of lime or your favorite dipping sauce.
