  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a large mixing bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and lemon juice.
  3. Add the chopped vegetables (bell peppers, zucchini, red onion, mushrooms, and cherry tomatoes) to the bowl and toss until evenly coated with the marinade.
  4. Soak wooden skewers in water for 10 minutes to prevent burning (if using wooden skewers).
  5. Thread the marinated vegetables onto the skewers, alternating between different types for a colorful presentation.
  6. Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and have grill marks.
  7. Remove the skewers from the grill and let them rest for a couple of minutes.
