- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a large mixing bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and lemon juice.
- Add the chopped vegetables (bell peppers, zucchini, red onion, mushrooms, and cherry tomatoes) to the bowl and toss until evenly coated with the marinade.
- Soak wooden skewers in water for 10 minutes to prevent burning (if using wooden skewers).
- Thread the marinated vegetables onto the skewers, alternating between different types for a colorful presentation.
- Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and have grill marks.
- Remove the skewers from the grill and let them rest for a couple of minutes.
- Garnish with fresh parsley before serving.
