Ingredients

  • Chicken breast - 300 grams, cubed
  • Red bell pepper - 1, cut into chunks
  • Green bell pepper - 1, cut into chunks
  • Red onion - 1, cut into chunks
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, paprika, oregano, salt, and black pepper to make the marinade.
  2. Add the cubed chicken to the marinade and toss to coat evenly. Cover and refrigerate for at least 15 minutes.
  3. Meanwhile, prepare the vegetables by cutting them into chunks.
  4. After marinating, thread the chicken and vegetables onto the skewers, alternating between chicken and vegetables.
  5. Preheat the grill to medium-high heat.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from the grill and let rest for a few minutes before serving.
