- Chicken breast - 300 grams, cubed
- Red bell pepper - 1, cut into chunks
- Green bell pepper - 1, cut into chunks
- Red onion - 1, cut into chunks
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Paprika - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, paprika, oregano, salt, and black pepper to make the marinade.
- Add the cubed chicken to the marinade and toss to coat evenly. Cover and refrigerate for at least 15 minutes.
- Meanwhile, prepare the vegetables by cutting them into chunks.
- After marinating, thread the chicken and vegetables onto the skewers, alternating between chicken and vegetables.
- Preheat the grill to medium-high heat.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
