Steps

  1. Using a spiralizer or a vegetable peeler, spiralize the red and yellow bell peppers and zucchini into 'noodles'.
  2. Heat the olive oil in a large skillet over medium heat and add the minced garlic, sautéing for about 1 minute until fragrant.
  3. Add the spiralized bell peppers and zucchini to the skillet, cooking for 5-7 minutes, stirring occasionally until they soften.
